Lentils are the oldest known pulses cultivated by humans, their domestication dating back at least 11,000 years. Originating in central and western Asia, they have been a staple in regional cuisine whose popularity has spread globally – especially on the Indian subcontinent – thanks to their versatility, high nutritional values and distinctive taste. Red lentils have the sweetest, nuttiest taste of all lentils, and require the shortest cooking time.
