Barley is native to North Africa and Southeast Asia, and is one of the oldest cultivated grains, having been grown by the Egyptians as long ago as 6,000 BC and having been the staple grain from which the Hebrews, Greeks, and Romans made bread, before wheat and rye gained pre-eminence. It remains a staple food across much of the world today, thanks to its nutritional value and versatility. Pearl barley has had part of the grain’s bran removed, so it cooks in less time than hulled barley.

USES: Pearl barley is such an endlessly adaptable grain that it’s hard to know where to begin a list of its many uses. In Western cooking, it’s mainly found in soups and stews, lending volume and a satisfying chewy texture. It’s also fantastic in risottos, or cooked as a pilaf, in desserts, and prepared as a breakfast cereal.

GRAIN GAINS: Pearl barley has a nutritional profile that includes vitamins B1, B2, B3, and B6. It's also a good source of iron, magnesium, zinc, copper, manganese, and selenium.
