Lentils are the oldest known pulses cultivated by humans, their domestication dating back at least 11,000 years. Originating in central and western Asia, they have been a staple in regional cuisine whose popularity has spread globally – especially on the Indian subcontinent – thanks to their versatility, high nutritional values and distinctive taste. Brown lentils have a higher fibre content than green lentils, and they hold their shape better than red or yellow lentils if cooked carefully. But you can alter their texture to suit whatever dish you’re cooking them in – or simply your personal preferences – through longer cooking, mashing or puréeing.
